Ingredients
- Caramel:
- 1 cup
- granulated sugar
- 250 mL
- ¼ cup
- water
- 60 mL
- Custard:
- 3 large
- eggs
- 3 large
- egg yolks
- 1 can
- sweetened condensed milk
- 300 mL
- 1 can
- evaporated milk
- 354 mL
- ½ cup
- clementine juice
- 125 mL
- ½ tsp
- pure vanilla extract
- 2 mL
Method
Step 1
Position rack in centre of oven, then preheat to 175°C (350°F). Place an 8-in. (20-cm) round baking pan in a roasting pan. Boil a kettle of water.
Step 2
Caramel: Stir sugar with cold water in a medium saucepan over medium-high. Cover and bring to a boil, without stirring, 3 mins. Remove lid and let mixture boil until it turns amber, 3 to 5 mins. (Keep your eye on it so it doesn’t get dark.)
Step 3
Immediately pour hot caramel into bottom of round pan. Quickly swirl to coat bottom evenly, if needed. Set aside to let caramel harden.
Step 4
Custard: Meanwhile, whisk eggs with yolks, condensed milk, evaporated milk, clementine juice and vanilla extract in a large bowl. Strain mixture into pan with hardened caramel.
Step 5
Pour hot water from the kettle into the roasting pan until it comes one-third up sides of round pan. (Be careful not to splash water into the custard or on yourself because the water will be hot).
Step 6
Bake until edge of custard is set but centre still jiggles slightly when gently shaken, about 35 mins. (Custard will set as it cools.) Remove roasting pan from oven, then transfer round pan to a rack and let flan cool completely, about 2 hr. Loosely cover dish with plastic wrap and refrigerate overnight until well chilled.
Step 7
To serve, run a paring knife around edge of flan pan to loosen custard. Set bottom of pan in warm water for 1 min to loosen caramel. Hold an inverted serving plate over dish, then quickly flip plate and dish together to release flan onto plate. Slice or scoop to serve.
